Ingredients
Makes 1 serving.
- 2 eggs
- 1 tablespoon low-fat milk
- 1 teaspoon olive oil
- 1/4 bell pepper, diced
- 1 handful spinach
- 2 tablespoons shredded low-fat cheese
- Salt and pepper
- 1 slice whole-grain bread, toasted
Steps
- Beat the eggs with the milk, salt, and pepper.
- Warm the oil in a nonstick pan over medium heat. Cook the pepper until soft, then add the spinach until it wilts.
- Pour in the eggs. As the edges set, lift them so uncooked egg runs underneath.
- When almost set, scatter the cheese over half, fold, and slide onto a plate. Serve with the toast.
Why it fits general guidance
Vegetables, whole grains, and low-fat dairy are part of the DASH pattern NIAMS describes. It contains no red meat, organ meats, or shellfish, which NIAMS lists among foods to avoid.
This is ordinary food, not a remedy. No single dish lowers urate or prevents a flare, and food does not replace a medicine your clinician prescribed. NIAMS says to talk with your clinician before making changes to your diet or medications, especially if you have kidney disease, diabetes, or another condition with its own diet.
